As you know I'm dealing with mono and am struggling to be tender with myself so that I can heal, while not feeling guilty for taking my energy away from the kids. So far being tender with myself means saying no sometimes, and letting little things wait until I'm ready.
The guilt we experience as mothers is already something we wrestle with, and when we are sick it's hard for us - nearly impossible - to slow down. I'm glad that you are finding ways to be tender with yourself, friend. Those little things are often bigger things than we realize. Everything adds up in one way or another. In this case, I hope that as you learn what tenderness towards yourself and your expectations looks like, that you find some peace and rest. You are worth it, and it's good for the kids to see that you are caring for yourself, too. Thank you for sharing.
I’ve always just cracked a couple eggs and put it in with the ground, beef and spinach. I actually just made this dish tonight believe it or not, and it was outrageous, I had to make my own seven spices and that was the best part, actually, the recipe was really good! I used 2 cups of broth instead of three, I think an onion sautéed might be good in this recipe, and may be a few mushrooms as well. But yeah, I think this is a keeper! This recipe is a winner! I have shared it a few times two friends that I know will make it as well.
That's so handy! I'll definitely try that next time. I can understand why you did 2 cups instead of 3. I prefer a thicker stew myself, though I did enjoy the broth with the rice immensely. It was homemade bone broth which I've figured out is so easy with an Instant Pot! I had wondered about an onion, too. Yay! I'm so glad you enjoyed it. :)
Oooooh that recipe looks good! Mom used to make something similar, it was ground beef and spinach and she would put eggs in it. Ground beef and spinach to go so well together don’t they?
